Earlier season plums work too if cut to the size of prune plums. As Deb P. recommends, make a day in advance to allow the fruit to meld into the cake. Yum.
WHAT? Ali, you have actually shocked me (but I still love you). Here in upstate NY you MUST wait till the prune plums arrive, but you are in for a treat. And then you will riff with our great fall apples!
Thank you for still loving me 🤣 I know, it is embarrassing to admit! I do get the beautiful prune plums from a local market (Healthy Living in Saratoga) later in the summer... I will be patient!
The torte, according to Burros, keeps well frozen so this sounds like a good solution to all the subpar grocery store stone fruit I always seem to end up with.
I would have loved to find De Gustibus! I make the torte many times each year because I have so many Italian plums from my trees and because the torte is so easy to make and to enjoy - mmm breakfast! Looking forward to reading more from you.
Loved reading this. I am embarrassed to admit I have never made the famous plum torte but you are inspiring me to make this the summer to try!
Thank you! I am going make this my summer to try again, this time with a fresh perspective.

Good to know!

Wonderful. Now check out Barbara Kafka. I recommend her Food for Friends, but a little research into her will reveal much more.
Thank you! A cursory search on her has me very intrigued. I will cross my fingers that someone offloads her books to a nearby library soon.
The torte is good with any fruit but is excellent with Italian plums. They are only available at the end of summer.
I used to live in Santa Fe where you couldn't go anywhere without apricots falling on your head. I think now it was a missed opportunity.
The Famous Torte is so good with apricots. Even mediocre grocery store apricots get transformed into something special in The Torte.

I dream about a perfect apricot I picked from a tree in the summer of 1971 in AZ. I’ve never had another to compare!
What a beautiful food memory. That must have been some apricot!

That all sounds positively dreamy.
